THE SPARK
Hannah Pollack and her husband Xavier
Meers were both working as chefs in 2016
when they added a homemade ice cream
sandwich to their restaurant menu. People
asked if they could take more home.
THE LAUNCH
They started Nightingale while still working
as chefs. Hannah woke up at 4 a.m. to make
sandwiches before her shift, and Xavier
delivered between services. They built the
business one ice cream sandwich at a time.
THE SETBACK
Their first big Walmart order was ready to
ship when they realized the date wasn't on
the outside of the box, only on the individual
wrappers. They unpacked everything and
stayed up through the night to fix it.
THE MILESTONES
Nightingale did $50K in its first year. In
2024 they hit their first $1 million month. In
2025, their first $2 million month. In 2026,
their first $3 million months, with no signs
of slowing down.
THE LESSON:
JUST KEEP
GOING
Hannah's best advice isn't about
strategy; it's about resilience.
Things will go wrong, sometimes
because of your own mistake. You're
allowed to feel it. But you don't get to
stop there. Figure out what needs to
happen next and keep moving. That's
what built Nightingale from $20 to $3
million months.
