my partner's 85 year old mom my partner's 85 year old mom is Filipino but I make most of her meals I feel like it's important her culture's cuisine on a regular basis so I turned her favorite Filipino flavors into an easy versatile more variety less effort and most importantly it works for an aging parent soft and lower sodium food but can easily be altered the rest of the family who doesn't so here's what I made this week Instant Pot chicken but to get a variety of meals out of it I have a few tricks Lola loves yardlong beans but they are tough for her to chew but the pressure cooker makes them nice and soft so those are going in there too along with squash for another one of my hacks and some taro for more variety this week next I add your usual Filipino aromatics garlic onion, garlic and of course fish sauce but Lola needs lower sodium so I go light on that but to add more umami fishy flavor I toss in a no salt added dashi packet and dried mushrooms then in go the veggies and a bay leaf then I bring it up to the max line with lower sodium chicken broth because I want this baby to make as much broth as possible while that cooks I start prepping everything else of course rice rinse and cook next up I season them with ginger Moong Split Split Moong Beans I season them with ginger a little fish sauce a dashi packet and dried mushrooms Lola needs her vegetables super soft but the rest of the family doesn't so I have a trick for that I peel Lola's eggplant but I leave the skin on for ours and then I put Lola's vegetables in parchment paper boats that way the veggies steam so they get nice and soft before the edges get all toasted which would make them difficult to chew the rest of the family a little bit more salt and is roasted uncovered and for less time mung beans are another challenge because Lola needs hers softer than ours so I just remove a portion for the rest of the family when they still have a bit more texture then to really soften Lola's I add 1/4 teaspoon baking soda and let them cook down longer Lola will have her lower sodium Instant Pot chicken but the rest of the family wants adobo so I marinate a batch of that chicken is ready but now it's time for my hack for more variety I remove the chicken drain the broth and separate and chop when the chicken's cooled I remove it from the bones then I take part of the broth add the squash and a can of coconut milk blend until smooth a second version of the broth next I take more broth add a little oyster sauce and soy sauce and then add some soaked rice noodles then to make the whole family happy I remove a portion with more sauce for the rest of the family I keep Lola's lower sodium and allow them to cook down a bit longer to soften more Filipino meals are often tocpped with scallions and fried garlic but those are a little bit difficult for Lola to chew so I came up with this blended scallion garlic calamansi drizzle for her but the whole family is obsessed with it so I make a nice big batch of that Prep's done we'll have a variety of meals all week everyone is fed and everyone is happy
