Freezer prep is a LIFE SAVER 😅🤤 when you need to feed a family with an aging parent my partner and I are Caregivers for 85-year-old mom. She requires soft and lower sodium food and of course the rest of the family does not. Because of our multigenerational household, it makes putting food on the table a bit more difficult. In the winter and colder months, the rest of the family doesn’t mind eating more broth meals that our aging parent eats. We just make it a little bit more our style with a bit more sodium and some crispy toppers. But once the summer heat hits, we just want some Light fresh food. But our aging parent, Lola still wants her brothy meals. So after being a caregiver for an aging parent for the past 2 1/2 years, I have a trick to make it work for everyone. I just prep easy meals that are freezer friendly ahead of time. A version for Lola and a version for the rest of the family. So today, I am making Lola a arroz caldo that I have frozen in my souper cubes. ARROZ CALDO 2 tbsp of olive oil bundle scallions 1 1/2 inch fresh ginger, grated 3 cloves of garlic, chopped small 1.5 lbs of chicken thighs, bone in, fat and skin removed (480 mg of sodium) 1 cup bone broth, lower sodium version 5 cups of low sodium chicken broth 3 dried mushrooms 1 cup jasmine rice 1 tsp of fish sauce 1/8 tsp white pepper Soft cooked veggies to serve (optional) can bring up flavor with more fish sauce, salt substitute, or MSG if desired #c#caregivera#agingparentss#softfoodm#mealprep
