Easy poached fish ❤️🤤 caregiver meals that work for the whole family my partner and I are caregivers for 85-year-old Mom. She requires soft and lower sodium food. And the rest of the family does not. Which can make family meal time a bit more complicated. But to make my life easier and to make it work for everyone, I figured it out a few ways to make it work. First thing I like to do is do a big food prep at the beginning of the week. I like to prep versatile ingredients that I can mix and match to meet everybody’s needs. And have variety throughout the week! So this week, I did a big Filipino meal prep. I prepped chicken for the week, but we don’t want to eat chicken for every meal. So what I like to do is take the prep ingredients and quickly poach fish to mix things up. If you are a caregiver for a grandparent or aging parent, poached fish is a great meal that makes everybody happy INSTANT POT CHICKEN (Filipino) 1 whole chicken 4 cups lower sodium broth water (enough to fill to max line) 6 cloves of garlic, peeled 1 onion, peeled, cut in half 2 cups Kalabasa Squash 4 taro, peeled 1-2 cups of yardlong beans 2 inches of fresh ginger, grated 1 tsp fish sauce 1 no salt added dashi packet 2 dried mushrooms 1 bay leaf DIRECTIONS Prep veggies, garlic, and onions Place all ingredients in pressure cooker Pressure cook on high for 25 minutes Allow to naturally release for 10 minutes Remove poultry to cool Remove meat from bones. Drain broth Save bones and scraps in a freezer bag for a future broth MUNG BEANS 1 lb dried mung beans (soaked over night) 7 cups water 1/2 TBSP fish sauce 4 cloves garlic, minsed 1 inch ginger, minsed 2 lime leaves 2 dried mushrooms 1 bay leaf 1/4 tsp baking soda (if needed) ##caregiver##agingparents##lowsodium##softfood
