my partner's 85 year old mom is Filipino but I make most of her meals when we moved her in with us to become her caregivers I felt like it was important for her to have her culture's cuisine still on a regular basis so I learned how to make Filipino meals but she does require soft and lower sodium food so sometimes things are not quite traditional but they're still a lot of her favorite ingredients and a lot of her favorite flavors a lot of Filipino meals are traditionally topped with scallions fried garlic but because she needs soft food that can give her a bit of a problem so to make sure she can still have some of her favorite flavors I came up with this fried garlic calamansi I had this in my last video and a lot of people were asking about it I have been putting the recipe in the comments I just make a video to show you how it's done take two cloves of garlic chopped of a bundle of scallions of a bundle of scallions also chopped and then I put them in a glass heat safe container some olive oil about 220 degrees Fahrenheit and then just pour it the garlic and the scallions this allows them to cook a little bit and release their flavors if you're cooking for an aging loved one and you want to make their food more nostalgic to them an important thing to pay attention to are condiments that they had used she always used this brand of fish sauce so that's the one that I use the flavor of calamansi unfortunately around us you cannot get that fresh but I did find these little guys from the Asian market this brand right here my partner and her mom absolutely love them Filipino approved as I said before Lola does require low sodium fish sauce is very high in sodium so I just use a small amount of it that way she still gets the flavor but it's not going to overdo it and make her food too salty for her and then calamansi juice or you can use lime juice if you cannot find this I just do around two tablespoons we have our savory we have our salty we have our acidity now we're going to balance it out with our sweet so I just add some sugar and then to give this more volume I just do 1/4 cup of water then blend until smooth and then you have this really delicious drizzle that will not give her any trouble when it comes to chewing but the whole family honestly really loves this as well I like to put mine in a squeeze bottle so I could just drizzle it nicely over her meals she's really happy about it you can also add things like and peanut powder to it to make a different version she really likes that one too just because somebody needs soft and low sodium food they have to give up their favorite flavors sometimes you just need to get a little bit creative
