my partner's 85 year old mom is Filipino, but I make all of her meals. I feel like it's important for her to have her culture's cuisine on a regular basis still. So when we moved her in with us, I learned how to make Filipino meals, keeping up with feeding a multi generational family is a lot of work. So to make my life easier, I prep things in large batches. I portion them out and I freeze them. And then when we need a quick lunch, I just defrost it, reheat it, and we're good to go. This right here is a Filipino chicken and rice porridge. I just made it in a large batch. It's a nice soft meal, soft and lower sodium food, and then I just dropped the sodium a bit. It's just one of her favorite dishes. So when you have these frozen blocks, you have a couple of options. You can just thaw it out in the fridge the night before. I did not do that. So I'm just going to put it in the microwave on defrost for a bit to soften it up, but to not overcook the chicken. That is just chicken, rice and a really delicious broth. So we need some vegetables. I normally have them prepped, but we didn't get there yet. So I'm going to make my life easy and I'm just going to use frozen broccoli and steam it in the microwave. This is just a really easy way to get soft vegetables on your table fast because Lola needs soft and lower sodium food. I do have to alter the meal a bit to make sure it does work for her. But I do like to try to honor the original dish as much as possible. Normally the dish is served with hard boiled eggs. So that's exactly what we're going to do. This meal is traditionally topped off with fried garlic and scallions, but those are both a little bit too difficult for Lola to chew. So to solve for that, I make this fried garlic scallion calamansi drizzle for her. That way she gets all of the flavor that you normally get, but it's obviously very easy to eat. So as I said before, Lola is Filipino, so this is one of her favorite meals. But you can take the same method and apply it to any meal. If you're feeding an aging loved one, just make some of their favorite meals in bulk, portion them out and freeze them. That way you just have them on hand for easy use.
