So I used to work at this French restaurant and one of my favorite dishes was the glazed carrots. I know, we're the more favorite dishes was a carrot dish. But they are that good. They used to use white sugar for their glaze, but instead I use brown sugar and this is my version I've been making ever since. So here's how you make brown sugar in time glazed carrots. Start by peeling and cutting the carrots. I like an oblique cut where you cut them at an angle, but any cut works as long as it's about a half inch thick. To cook, place a large pot over medium heat and then add butter. Once that's bubbly, add the carrots, season with salt and pepper, and then add a sprig of thyme. Top with the lid and then sweat for three minutes. Since they are root vegetables, they are harder at the core. So adding a lid and steaming it will speed up the cooking process. Remove the lid and then stir in 1/4 cup of brown sugar and 1/2 cup of chicken stock. Mix to combine and then bring that up to a low simmer. And then top with the lid for around 5 minutes. From there, remove the lid and then we're just going to reduce and simmer until that liquid creates a glazed coat the carrots. Around 5 to 10 minutes.
