Have you ever wondered why in and out french fries suck? Like let's be honest, they are the worst fast food french fry out there. Always soggy and sad. And even when ordered animal style, they are still bad fries! Why is this? Well, they make them completely wrong. In N Out Style. Good Fries. So let's compare a properly made french fry to an in and out style french fry. A well made french fry has multiple steps. To start, you must remove excess starch. You can either do that by soaking in water or blanching really quickly in boiling water. After drying off, you then go through a first fry. Our fries are fried first at a lower temperature, around 325 degrees Fahrenheit. This is used to cook the potato through. From there, you place on a sheet tray and pop in the freezer or refrigerator to set the starch, meaning it will hold its shape and hold firmer for the last fry. And finally, the last fry is done at a higher temperature of around 375 degrees to make it crispy and golden. Now, what does In-N-Out do? They cut their fries fresh, like they say. Then immediately go into the fryer. No starch removal, no first fry, no refrigeration or freezing. Which results in a soggy and frankly, awful french fry.
