When I used to work at this farm to table restaurant, they were known for their vegetable side dishes. And one of my favorites was their Italian inspired zucchini pangritata. It's a quick sauteed zucchini that is then finished in butter and toasted breadcrumbs. It is so good with that extra crunch. So here's how you can make it. Pangritata is an Italian cooking method where you basically toast breadcrumbs in butter and then add them to a vegetable dish. I like to cut the zucchini into long quarter inch and then one half inch slices so you get these small triangles that cook a lot faster. Then the cooking process only takes 10 minutes. In a large pan over medium heat, add olive oil. Once that's hot, stir in the zucchini. You're going to season that with salt and pepper and then we're going to saute for around 5 minutes until they're softened and cooked through but still a tiny bit al dente. Then add two tablespoons of butter and once that's melted, add 1/4 cup of Italian breadcrumbs. I use gluten-free because I'm allergic and I will drop my favorite brand below because you honestly can't tell they're gluten-free. Toast for 2 minutes until crispy and then finish with juice from one half lemon. It genuinely is the easiest way to make zucchini that is actually delicious and under 10 minutes.
