“It’s dinner time, y’all!” ❤️ Before anybody tells me… 😂 I KNOW this isn’t authentic egg foo young. 🥷🏻🥷🏻🥷🏻🥷🏻 This was the “egg foo young” my best friend’s mama made when I was in my early 20s, and that’s what they called it. It’s been called that in my world ever since, and I’m not changing it now. 🤣 It’s one of those old-school struggle meals that somehow turned into one of our all-time favorite comfort foods. Simple ingredients, feeds a crowd, comes together fast, and Kenny would eat it every single week if I’d let him. Here’s what you’ll need: 🥩 1 lb ground beef 🧅 1 large onion, diced 🥕 1 large can Veg-All (or mixed vegetables) 🍚 2 cups uncooked rice (about 4 cups cooked) 🥚 6 eggs 🧈 ⅓ stick butter 🧄 1 Tbsp garlic powder 🥄 2 Tbsp Knorr beef bouillon 🫙 Soy sauce for serving ⚫ Black pepper to taste Cook the beef with the onion, garlic powder, beef bouillon, and pepper. Drain. Cook your rice (I used chicken broth with a little Better Than Bouillon for extra flavor), then lightly fry the cooked rice in butter. Stir in the beef mixture, Veg-All, and beaten eggs until the eggs are cooked through. Top it with soy sauce and dig in!
