Replying to @tina ¨̮ alright fam it’s finally hereeee after so many trials and errors 🤘🤘🤘 pls ignore my cat throwing a tantrum in my voiceover 😭 high-protein bun cha (5 servings) 515 kcal 38P 50C 21F | 745mg sodium (macros already include the cooked vermicelli 🍜) heads up: if you don't finish all the dipping sauce, your carbs and sodium will come in a lower, I actually didn't finish all the sauce 🙂↔️ ingredients base: - 500g cooked vermicelli total, 100g per serving - veggies of choice - store-bought pickled radish bc I got no time😅 meatball mixture: - 290g (~10 oz) berkshire ground pork - 550g (~19 oz) skinless, boneless chicken thigh - minced shallot - 16g honey - 25g oyster sauce - 32g fish sauce dipping sauce: - 3 cups water - 50g white sugar - 30g Lakanto golden monkfruit sweetener with allulose - 1/2 cup fish sauce - minced garlic (optional) instructions 1. blend the ground pork a little more for a finer texture as shown in the video 2. blend the chicken thigh to match the texture in the video, then mix well together with ground pork. 3. add the minced shallot and the marinade (honey, oyster sauce, fish sauce). mix well and let marinate for at least 5 hours or overnight if possible. 4. to make the dipping sauce, boil water over medium heat in a saucepan, then add sugar, fish sauce, and garlic (optional). whisk well for everything to dissolve and turn off heat. if you prefer yours to be sweeter, feel free to add more Lakanto sweetener, it's 0 kcal. 5. preheat the air fryer to 400°F and add a liner or foil. 6. shape the meatballs into 2.5 inch balls, spray LIGHTLY with an oil spray, and pop them in. 7. drop the temperature to 355°F and cook for 20 minutes, flipping halfway. 8. if you want more char, increase the temperature to 385°F for another 3 to 5 minutes.
