another episode of “you don’t have to give up your cultural food to get fit”! this is actually so much easier to meal prep than it looks and doesn’t take long to prep at all 🤌 it’s on my repeat list because ROI with time and flavor is high 😆 high-protein bun bo hue meal prep (8 servings) 551 kcal 52P 52C 14.7F (macros already include 1 serving of bean thread noodles) this one is not hypertension-friendly, so keep that in mind if you're watching your sodium 🫀🧂 ingredients broth: - 8 tsp @Quoc Viet Foods hue style soup base - 6 cups Kirkland organic chicken bone broth (48 fl oz) - 7 cups water - 1 can of drained pineapple chunks - 1 tbsp dried chili satay (mine is homemade & brought over from Vietnam with love but you can also get one from Cholimex) - 4-5 stalks lemongrass, chopped in half toppings: - 2 packs of beef meatballs (21.6 oz) - 19 oz beef tenderloin (~540g), thinly sliced - 12 oz beef eye of round (~340g) - veggies of choice - sliced onion (optional) noodles: - 50g dry bean thread noodle per serving instructions 1. turn the heat to medium high and add the dried chili satay. no need to add oil because it already comes in oil, just stir fry until fragrant. 2. add the lemongrass and stir until fragrant. 3. add the chicken bone broth, water, and drained pineapple chunks. the pineapple gives our broth a natural sweetness without adding sugar! 4. add the Quoc Viet bun bo hue seasoning and the beef balls. 5. cover with lid, drop the heat to medium low, and let it cook for another 15-20 minutes. 6. meanwhile, slice the beef tenderloin thin. 7. for the eye of round, I pounded mine because I like it that way, but you can also slice it. 8. uncover the lid, bring the heat back up to medium high, and slowly add the beef into the boiling broth to cook it through. cooking it right in the broth helps intensify the flavors 🤤 9. once the beef is cooked, set aside to portion later. ✨meal prep tips✨ - I store the meat and broth together in one container, with the dry bean thread noodles on the side. - when you're ready to eat, add everything into a bowl, cover, and microwave for 3:30. - feel free to add more veggies, I eat mine with sliced onion. #tiktokcreatorsearchinsights #vietnamesefood #bunbohue #asianfitness #asianmealprep
