When life gives you lemons If you make lemonade, you make lemoncello. 89 organic lemons and you want to wash them really well. Peel the skins, no pit. Add them into a jar. And 750 milliliters of Everclear. Everclear Grain Alcohol. You could also use vodka. Store in a cool dark place. Shake periodically. For the simple syrup, two and a half cups sugar and four cups cold water. We're gonna bring it to a boil, then reduce it to a simmer. We just want to melt the sugar. Turn the heat off. Let it cool. After 25 days, strain it through my strainer, lined with cheesecloth. Put the lemon skins in. No waste. Keep these. Set them aside. So we're gonna marry the alcohol soaked skins in with the simple syrup. Into the freezer until it's well chilled. Enjoy after dinner. It's a digestif. Just sip it. Mmm. Delicious. Not too sweet. Ever tasted limoncello? It's like cleaning product. Not this. Can I be honest? I never really loved limoncello. I didn't. Because I didn't have this. Don't go anywhere. I got something else. Dehydrate the lemon skins at 125 degrees for four to six hours. Nothing goes to waste. And then press the lemons, squeeze all the lemons. Even the rinds don't go to waste. They make the gorgeous smelling. Don't overload it. Do a few at a time. Sweeten the lemon juice with simple syrup and dilute with cold water to make Italian lemon ice push pops. Remember these when you're a kid. Or if you just want to make homemade lemonade. Lemonade. That cool refreshing drink. To finish the lemon skins, puree them into a powder. Add it to baked goods, dressings, tea, a soft body scrub or a spice rub. And spice rub.
