The chef has a potato dish to impress someone. That dish would be fondant potatoes. So fondant potatoes are often used in more of like a fine dining setting. They are potatoes that are seared and then braised in butter, herbs, chicken stock, so really takes on all of those great flavors. And they're usually typically served with like a fancier meat dish. They are delicious, they are golden, they are buttery, soft, and moist on the inside, and they're so good. So let's make them. First up, we're going to prep the potatoes. You're going to want to skin roast or best for this recipe are russets because they're higher in starch and get a good sear while still being like creamy and delicious when you cook. And I use a round cutter around the size of like a scallop. So I cut into like one inch strip and then from there I use the circle cutter. Now, obviously, this makes a lot of waste, right? You're going to punch through the potato and then the whole outer ring that we're not going to use, so I actually save that and make like a hash with it later. So don't throw those away, you can save them and save them and make them into hash later. But cut them into round circles or any shape that you want. And then we're going to put them in a bowl and cover with water for around 20 minutes. This removes excess starch. Then right before cooking, we're going to dry them all on a paper towel because we're going to sear them and then they would just be a watery mess. Mix with oil. So in a pan over medium heat, add avocado oil. And then we're going to sear the potatoes, presentation side down until they get a nice crust, which usually takes around 7 to 8 minutes. Let them sit there. Let them cook and get a nice crust. Also, I choose a rondeau, which is a pan with a little bit higher sides because we are adding liquid. So you want to have them looking like this. And then we'll flip them all over. And it's really funny, right? Because they genuinely look like scallops. Like look at that. That looks like a scallop. It's delicious and it's golden. It's just potato version. Now from here, we're going to add butter, crushed garlic cloves, herbs like thyme, rosemary, or sage. And this is just going to add flavor to the potatoes as they cook. Let the butter melt and bubble. And then stir in chicken stock. Make sure to season them with salt and pepper all over. The number one mistake is people don't season them in this step and then the potatoes are very bland. Turn that to a 400 degree oven and bake for around 15 to 20 minutes until the potatoes are fork tender and delicious. Like so. You can serve them plain or I like to just keep them dipped in this delicious sauce and they're absolutely amazing. And that's how you make fondant potatoes.
