Let's score this round sourdough loaf. Has been proofing in my refrigerator for about 18 hours. I am spritzing with a fine mist of water, dusting with Thai rice flour, spreading that out over the dough. I'm leaving enough on the dough, wiping off excess. I take some baker's twine. Going out scoring. Essentially eight pie triangles. We're scoring. I use a UFO or lame favorite. Easy handle control. So in each of these triangles, shapes, as scored. So straight middle, then angled lines down the rest of the triangle. You tried them each triangles, line up? Really score, but the result very impressive. It took me longer than 3 minutes to do that. Here's bake. Put my 6 quart Dutch oven. Oven's preheated to 450 degrees. Bake 7 minutes covered. Out expansion. Line middle. The 23 minutes covered halfway. Uncovered 20. Final. Always bottoms. Perfect.
