Let's make a cozy dinner: Lasagna soup

Full recipe down below, you can also find it in the link in my bio! 🤎 Lasagna soup Ingredients: ⁃ 1 small onion, diced ⁃ 5 garlic cloves, minced ⁃ Parsley ⁃ Basil ⁃ 1 lb mild Italian sausage ⁃ 2 tbsp tomato paste ⁃ 5 cups chicken stock ⁃ 24 oz marinara sauce ⁃ 1/4 tsp thyme ⁃ 1/2 tsp chili flakes ⁃ 1 tbsp onion powder ⁃ 1 tbsp garlic powder ⁃ 1/2 tsp paprika ⁃ 1 tsp Italian seasoning ⁃ 1/2 tsp oregano ⁃ 1 tbsp tomato bullion ⁃ Parmesan rind ⁃ 6-8 sheets lasagne noodles ⁃ 1/2 cup Parmesan ⁃ 1/3 cup mozzarella ⁃ 1/3 cup heavy cream Ricotta mixture ⁃ 1/3 cup ricotta ⁃ 1/4 cup mozzarella ⁃ 1 tbsp basil ⁃ 2 tbsp parsley ⁃ 1 tsp onion powder ⁃ 1 tsp garlic powder ⁃ Salt and pepper to taste Instructions: Dice the onion and mince the garlic. Heat about 1 tablespoon of olive oil in a large pot over medium heat. Add the onion and garlic and sauté until the onion is translucent. Add the Italian sausage and cook until browned, breaking it up as it cooks. Stir in the tomato paste, chicken stock, marinara sauce, spices, and fresh basil. Mix well. Break the lasagna sheets into smaller pieces and add them to the pot, along with the Parmesan rind. Cover and simmer on low heat for 20–25 minutes, or until the lasagna noodles are tender. Remove the Parmesan rind, then stir in the Parmesan, mozzarella, and heavy cream. Simmer for another 5 minutes. Serve warm, topped with the ricotta mixture and fresh parsley.
