If you're looking for an easy weeknight dinner, you have to make this lasagna soup. It is seriously one of those meals that takes barely any effort but tastes like you spent way more time on it. And with fall right around the corner, I feel like this is going to be on repeat. It's basically all the best parts of lasagna in a soup form. It's one pot, barely any cleanup. You just brown your ground beef and onion, add in your tomato paste and garlic, and pour in a jar of Rao's homemade marinara sauce with some beef broth. Break up your lasagna noodles and let everything cook until the noodles are soft and tender. And finish it off with a little bit of heavy cream. And then the best part, the ricotta topping.
