We’re camping with the kids this weekend and service is a little spotty, sharing one of the things I made to take with us.🤎 These are my plain sourdough English muffins - probably one of my favorite things to make right now. This batch was two dozen, but I scaled the recipe below for 12 so it’s a little more manageable! Sourdough English Muffins (makes 12 at 100g each 443 g whole milk 170 g active sourdough starter 14 g honey 596 g bread flour 12 g fine sea salt Cornmeal for dusting Mix the milk, starter, honey, flour and salt until combined. Let rest for about 1 hour. Do a gentle stretch and fold, then another fold about 30 minutes later. Let bulk ferment until the dough is airy and nicely risen. Divide into 100g portions, gently shape into rounds and flatten slightly. Coat both sides with cornmeal and let proof until nice and puffy. Cook low and slow on a griddle for about 5-8 minutes per side, flipping as needed, until golden and the centers reach about 200-202°F.
