You want to make homemade sourdough tortillas. I'll show you how. Once you've had homemade sourdough tortillas, you cannot go back to store-bought ones. I'm gonna start with 150 grams of warm whole milk. This is my starter, Margaret. She will be two in February. I fed her early yesterday. I used discard. She's not super hungry, she's a little bubbly. 100 grams of starter or discard. 55 grams of olive oil. 285 grams of flour. And then if I need to add a little bit more, I'll add up to 300. 6 grams of salt. And one teaspoon of baking powder. Just six grams. Stir that all incorporated. 55 grams of olive oil. 285 grams of flour. And then if I need to add a little bit more, I'll add up to 300. 6 grams of salt. And one teaspoon of baking powder. Just six grams. Stir that all incorporated. I'm gonna need it on the counter a little. Lift, push. Lift, push. Keep doing that. This is the texture. 4:30. I'm gonna let it sit for at least two hours. I'm gonna put it in the microwave with my range light on low. I got these beeswax wraps. They're reusable bowl covers. Not plastic. It's 9:30. My daughter came over. And tops. I'm gonna take my bowl. I'm gonna cut it into nine. About 65 grams. Take my bowl. I don't have a tortilla press. I would like to get one. Just roll them as round as you can. I have a cast iron on a medium heat. And you put them in the pan. Let them cook for about 40 or 50 seconds. Once they're cooking, flip it. Don't pop the bubbles. It's tempting, but don't do it. Cook them until they get a little bit of color on them. Margaret really likes bubbles. And as they come off, I just put them on top of each other and cover them up. And then they'll be nice and pliable. I have a cast iron on a medium heat. And you put them in the pan. Let them cook for about 40 or 50 seconds. Once they're cooking, flip it. Don't pop the bubbles.
