you’ve been asking for this one, so here it is. 🤍 after lots of testing (and plenty of taste-testing 😅), i finally landed on my perfect chocolate chip cookie. browned butter, crispy edges, soft chewy centers, and lots of chocolate. i hope you love them as much as I do! 🍪shelly's chocolate chip cookies🍪 ingredients: 2 sticks unsalted butter 1 tbsp cold water 1 cup packed brown sugar ½ cup granulated sugar 1 large egg 1 large egg yolk 2 tsp vanilla extra You have to have brown butter. You have to have brown butter. It gives the cookies the best flavor. I add in two tablespoons more water. Brown your butter loses its moisture. Brown sugar, white sugar, corn syrup. You don't have to do this, but I do. I'm making a big batch of cookies and I'm only doing two tablespoons. But what this will do is help the cookies stay a little softer and chewier for the next day. Mix all of this in. Two full eggs and egg yolks. I think the best way to do it is your hand. I just crack it. Put it right in my hand. All the whites just disappear. Homemade vanilla. Oh, it's getting so gone. Smells so good. 4 teaspoons. Mix it all in. Kind of fluff up your flour. So it's not packed. Salt, baking soda. I'm gonna fold in the flour. So it doesn't get mixed too much. Fold in again. Now for the other half of flour. It is a little tedious, but it makes a difference. Chocolate chips. Chocolate chips are incorporated. I'll scoop them out and bake them without chilling them. So you can see how they do right after you've made them. My cookie scoop is 24. Whatever that is. It looks like maybe two and an inch and a half. I only do six on a tray because I don't want them touching each other. On a 350 degree oven, I'm guessing about 10 minutes until they get lightly brown around the edge. Perfect. But they'll settle and be just perfect. First things first. A glass of milk.
