LIGHTENED-UP CHICKEN PARM 🍝✨ If you’re looking for an easy high-protein dinner idea, you need to try this lightened-up chicken parmesan! Crispy breaded chicken, marinara + melty mozzarella served with high-protein pasta. The perfect easy weeknight dinner when you’re craving classic chicken parm but want to keep things a little lighter. ~230 calories + 33g protein per chicken cutlet Ingredients: • 1.4 lb thin-sliced chicken breast (about 5 cutlets) • 1 egg, beaten • 100g Italian breadcrumbs for breading (you may not use all of this) • 90g Trader Joe’s Lite Mozzarella • 75g @Carbone Fine Food Marinara Sauce • 1 tbsp + 1 tsp olive oil • Salt, fresh cracked pepper + garlic powder, to taste • Fresh basil + parmesan, for topping Pat the chicken dry and season both sides with salt, pepper + garlic powder. Dip each chicken cutlet into the beaten egg, then coat both sides in breadcrumbs. Heat a light layer of olive oil in a skillet over medium to medium-high heat. Once hot, cook the breaded chicken cutlets for about 3–4 minutes on the first side + 2–3 minutes on the second, or until golden and the internal temperature reaches 165°F. Top each cutlet with marinara + lite mozzarella and broil for 1–2 minutes, watching closely, until the cheese is melted. Finish with fresh basil + parmesan.
