The easiest way to use up sourdough discard…cracker! I made 3 flavors today: cheddar + chive parmesan + parsley swiss + toasted sesame I don’t really measure these anymore because they’re so easy to customize! Spread discard VERY thin and evenly onto a parchment-lined or silicon mat on a baking sheet. Cheddar + Chive: Once the discard is spread thin, sprinkle with salt, pepper, grated cheddar cheese, and chives. Parmesan + Parsley: Once the discard is spread thin, sprinkle with salt, pepper, grated Parmesan cheese, and parsley. Swiss + Sesame: Once the discard is spread thin, sprinkle with salt, pepper, grated Swiss cheese, and toasted sesame seeds. Bake at 350F for 10 minutes. Take them out and score them into crackers with a pizza cutter, then return to the oven for about 15 more minutes. Keep an eye on the edges - the outside crackers usually crisp up first. I pull those off as they’re ready and let the crackers toward the center continue baking until they’re completely crisp. Cool completely before breaking apart and packaging. Stored airtight at room temperature, I recommend enjoying them within 1-2 weeks for the best quality.
