i’ve had so many people ask me to show exactly how i feed my sourdough starters, so we’re feeding margaret and millie together. they’re at very different stages - margaret is almost 2 years old and millie is only about 2 months old - but both of them doubled in about 4 hours. the biggest thing i’ve learned is that every starter has its own rhythm. with margaret, i’ve used her at every stage and she consistently gives me my best bread when i let her go just slightly past peak. i wait until she domes, flattens out, and drops about half an inch. that’s her sweet spot. my bulk fermentation, rise, texture, and even the flavor are always better when i use her there. millie is still younger, so she takes a little longer and behaves a little differently, which is totally normal. next up - we’re using margaret to make 3 classic sourdough loaves. #sourdoughstarter #sourdoughtips #sourdoughforbeginners #sourdoughbread #sourdoughtiktok
