Chocolate Zucchini Bread (recipe from Sally’s baking addiction!) * 1c all-purpose flour (spooned & leveled) * 1/2c unsweetened cocoa powder * 3/4 tsp baking soda * 1/4 tsp baking powder * 1/4 tsp salt * 1/2 tsp espresso powder * 3/4 cup dark chocolate chips * 2 large eggs, at room temperature * 1/4c melted coconut oil * 1/3 cup plain Greek yogurt * 2/3 cup granulated sugar * 1tsp vanilla extract * 1.5c shredded zucchini (no need to blot) Mix all your dry ingredients including the chocolate chips into a bowl. Set aside & mix all your wet ingredients. Slowly incorporate the wet mixture into your dry while mixing. The batter will be SUPER thick. This is normal. Then fold the shredded zucchini into your batter. Place in an 8x8 loaf pan. You can use parchment paper or spray the pan with nonstick cooking spray. Bake @ 350 for 45-55 mins. Cover the bread halfway with aluminum foil to prevent it from drying out. You can press more chocolate chips on top when you take it out the oven for aesthetic purposes. The bread is done when you poke it with a toothpick and it comes out clean. Let the bread cool on a rack for one hour before slicing! #mealprepwithme #mealprepideas #mealprep #weeklymealprep #healthymealideas
