Smothered Pork Chops 1 family pack of bone-in pork chops (8 total- about 3.6 pounds) Seasoning blend 1 Tbsp seasoned salt 2 tsp garlic powder 2 tsp onion powder 2 tsp smoked paprika 2 tsp oregano 1 tsp pepper Mix well. After cleaning and drying the pork chops: Add Worcestershire sauce Add 1-2 Tbsp mustard Use 2.5 Tbsp of the seasoning blend to season the pork chops. (The remainder will be used for the flour) In a separate bowl, add 1.5 cups of all purpose flour and the remainder of the seasoning. Mix well. Lightly coat both sides of the pork chops in the seasoned flour. Do not throw the flour out yet, you’ll use a few tablespoons for the gravy. In a skillet on medium high, add oil and 2 Tbsp salted butter. Add enough oil to cover the bottom of the skillet. Shallow fry the pork chops 2-3 at a time for 3-4 minutes on each side. Then place into a large oven safe dish. It’s okay if they aren’t cooked thru yet. They’ll finish off in the oven. Remove the oil and clean out any excessively charred bits. Add 3 Tbsp salted butter. Add 1 sliced yellow onion and 1 green bell pepper. Once the onions are translucent, add in 3-4 chopped garlic cloves. Next add 3 Tbsp of the seasoned flour and cook for 2 minutes. Slowly stir in 2 cups of chicken broth. Add 1 cup of water, then half a cup of heavy cream. Stir well. *optional, add browning for color* Season to taste with seasoned salt, pepper and smoked paprika. Pour the gravy over the pork chops. For a darker, thicker gravy bake uncovered on 350°F for 1 hour. For a lighter, thinner gravy bake covered on 350°F for 1 hour.
