French onion meatballs! Inspired by ~soup~ 🧅 * 2 tbsp butter * 1 medium yellow onion, thinly sliced * 1 tbsp fresh thyme * 1 tbsp fresh rosemary * ⅛ cup white wine * ¼ cup beef broth + ½ cup beef broth, plus more as needed * ¼ cup breadcrumbs * 1 egg * Salt and pepper, to taste * 3 tbsp shredded cheddar cheese * 1 lb ground beef * Fresh parsley, chopped, for garnish 1. Melt butter in a medium saucepan over medium heat. Add the sliced onion and cook until it begins to turn golden brown (about 7-10 mins). 2. Add thyme, rosemary, white wine, and ¼ cup beef broth. Simmer until most of the liquid has evaporated. 3. Transfer ¼ cup of the onions to a bowl. Mix with breadcrumbs, egg, salt, pepper, cheddar, and ground beef. 4. Form into meatballs and bake at 375°F for 20 minutes. 5. Continue cooking the remaining onions, adding beef broth as needed, until caramelized. Add another ½ cup beef broth. 6. Add the meatballs to the saucepan, cover, and cook for 5–7 minutes. 7. Serve with the onions and broth spooned over top and garnish with fresh parsley.
