STEAK, MASH & HONEY ROASTED CARROTS 1 Large Bowl MACROS ~670 Calories | ~60g Protein | ~65g Carbs | ~20g Fat Steak * 8 oz (225g) raw NY strip * 1 tsp salt * ½ tsp black pepper * Olive oil spray Yukon Mash * 250g cooked Yukon Gold potatoes * 40–50g warm milk * 1 tsp salt * ¼ tsp black pepper Honey Roasted Carrots * 150g carrots * Olive oil spray * ½ tsp honey * ½ tsp garlic powder * ½ tsp smoked paprika * ¼ tsp salt * ¼ tsp black pepper Pan Sauce * 30g shallot, finely diced * 1 small garlic clove, minced * 100g low-sodium beef broth * 5g butter * 1 tbsp fresh parsley * Black pepper INSTRUCTIONS 1. Carrots: Peel and season carrots with a light olive oil spray, honey, garlic powder, smoked paprika, salt and pepper. Roast at 425°F for 20–25 minutes, flipping halfway. 2. Mash: Boil potatoes for 15–20 minutes until fork-tender. Drain and mash, gradually mixing in the warm milk. Season with salt and pepper. 3. Steak: Season steak with salt and pepper. Heat a pan over medium-high heat and lightly spray the pan with olive oil spray. Sear the steak to your preferred doneness. Rest for 5–10 minutes, then slice. 4. Pan Sauce: In the same pan, cook shallot for 1–2 minutes. Add garlic and cook for about 20 seconds. Add beef broth and scrape up the browned bits. Simmer for 3–5 minutes until reduced by about half.
