EPISODE 1: M&S GINGERBREAD & WHITE CHOCOLATE COOKIES 🍪 Welcome to Make It For Less - my new series where I recreate some of our favourite shop-bought foods at home to see if we can save some money AND get them tasting just as good 🙌🏼 And obviously I had to start with the viral @Marks and Spencer gingerbread & white chocolate cookies 🤤 The M&S ones are £3.25 for 5, which works out at 65p each, whereas mine worked out at around 50p each. Not the biggest saving in the world 😂 BUT these were absolutely delicious and I’d 100% make them again especially when they’re not in season! Ingredients: 125g salted butter
100g dark brown soft sugar
75g caster sugar
1 tbsp black treacle
2 egg yolks
230g plain flour
20g cornflour
½ tsp baking powder
½ tsp bicarbonate of soda
2 tsp ground ginger (I’d add an extra tsp to make them an even closer match)
150g white chocolate, roughly chopped
75g soft fudge, chopped Method: 1. Preheat the oven to 170°C fan and line a large baking tray with baking paper. 2. Cream the softened butter, dark brown sugar and caster sugar together until well combined and slightly lighter and fluffy. 3. Add the egg yolks and black treacle and mix again until combined. 4. Add the plain flour, cornflour, baking powder, bicarbonate of soda and ground ginger, then mix until it just comes together into a cookie dough. 5. Fold through most of the chopped white chocolate and fudge, saving a little of each for the tops. 6. Divide the dough into 10 equal pieces and roll into chunky balls. Push the remaining white chocolate and fudge into the tops. 7. Chill the cookie dough balls in the freezer for around 15 minutes or in the fridge for an hour. 8. Bake for around 11-13 minutes. You want the edges to be set but the middles to still look slightly underdone. 9. As soon as they come out of the oven, drop the baking tray onto the worktop from a few centimetres up to help them flatten slightly. 10. Leave them to cool on the tray for around 10 minutes before moving them - they’ll continue to set as they cool while keeping that lovely soft middle 🤤 Now tell me what shop-bought favourite I need to try and make next 👀 #mands #mandscookie #cookierecipe #fyppppppp
