isn’t it versatile x (for the coffee chia pudding) you’ll need: - 50ml any milk - 2tbsp greek yogurt - 2tbsp chia seeds - 1tbsp honey / maple syrup - 1 shot espresso (or 2 if you like it strong!) or dissolve 1tsp instant coffee in a little boiling water (for the coconut banana): - 1 banana - 2tbsp dessicated coconut - 1tbsp honey - 1tbsp butter for frying (for the hazelnut granola): - 1/3 cup oats - 2tbsp chopped hazelnuts - 2tbsp maple syrup method: 1. begin by mixing the milk, yogurt, chia seeds, honey and espresso in a small bowl and mixing until thoroughly combined. 2. pop in the fridge for at least 30 mins (i left mine overnight so add a little more milk if you are leaving overnight!). 3. meanwhile, peel and split the banana lengthways. 4. evenly drizzle the honey over the face of the banana slices and lightly brush the banana so the honey is coating the banana all over. 5. now sprinkle over the coconut and ensure the banana is generously coated. 6. melt the butter in a pan on a medium heat and place the banana slices face down onto the pan. 7. cook for a few minutes or until golden and crispy. carefully flip over and fry on the other side until both sides are beautifully golden and caramelised. remove the banana from the pan and leave to one side. 8. using the same pan, add in the oats, hazelnuts and maple syrup. 9. toss around until the oats are evenly coated and cook for another 5/7 minutes or until golden. 10. gather into one compact flat layer on the pan and press down using the back of a spatula. remove the pan from the heat and allow the granola to fully cool (about 10 mins). 11. meanwhile you can place the banana back on the same pan to keep warm. 12. now assemble your bowl by placing your yogurt of choice first, followed by the coconut banana. 13. once the granola has fully cooled and hardened, break up into clusters using a wooden spoon. 14. carefully spoon over the granola and finish with a generous dollop of nut butter of your choice (i use crunchy peanut butter!)… enjoy xxx☕️ #EasyRecipes #coffee #yogurt #yogurtbowl #breakfast
