Designed to not be too seeet so feel free to up the maple syrup as desired! makes 4 servings, keeps 5 days in the fridge batter ingredients: 4 eggs 1.5 cups Greek yogurt ½ cup pumpkin purée (not pie filling) 1 cup milk ¼ cup maple syrup (up to ¾ cup if skipping the crumb topping) 1.5 cups all-purpose flour 2 teaspoon baking powder 1 tablespoon pumpkin pie spice 1 teaspoon cinnamon ½ teaspoon salt crumb topping ingredients: 2 tablespoon cold butter ¼ cup flour 2 tablespoon brown sugar 1 teaspoon cinnamon ¼ teaspoon salt how to make em: 1. Heat the oven to 350°F. Grease 4 oven-friendly round or rectangular glass meal prep containers. 2. Whisk or blend all the batter ingredients together until completely uniform, some streaks of flour are fine. then pour into the prepared containers. 3. Rub the crumb topping ingredients together with your fingers until it looks like coarse crumbs. Scatter over the top of the batter, don't press it in. 4. Bake 30 to 35 minutes, until a knife in the center comes out clean. The edges set before the middle does, so check the center. 5.
