My milk just expired, so let's make some Vietnamese yogurt. We're going to use one can of condensed milk. I'm just putting everything into a four cup measuring glass. You're just going to fill this can with boiling hot water to get all of that extra condensed milk out, and careful handling it because it is hot. Going to switch out from my spoon to a whisk just to make sure that is all incorporated. And now we do want a can and a half of milk. I'm using whole milk from Straus, but you can use whatever whole milk you want. So that is one can, and about half. Mix this together. And now you'll want to add roughly 100 grams of yogurt. If I already had some Vietnamese yogurt, I would basically just use my last jar, but I don't, so we're going to go ahead and use this yogurt. Add that in. Ooh, that's like really nice and tart. I really like that. Just whisk this all together. I'm just going to pour this mixture into my yogurt jars. I'm going to wipe down these edges. This made enough for about six jars of yogurt. Go ahead and put these lids on. And now I'm just going to pop these into my Instant Pot. I'm going to put some water. Now we'll just put our lid on. I'm going to put it on the yogurt setting for 8 hours and 30 minutes. The yogurt's been incubating for a little under 8 hours and 30 minutes. I'm going to go ahead and open it up and check. So what I'm kind of looking for right now is just making sure that nothing is liquid still, and it is nice and set. So I'm going to go ahead and take these out. And now we'll just transfer these to the fridge and they'll be ready to eat once they're chilled. And after chilling, you're left with a super smooth and sweet, tangy yogurt.
