No way is my son eating ultra-processed chicken nuggets 😫 We don’t eat UPFs, and chicken nuggets are not allowed in our house. I’d rather give my toddler real chicken in a bowl of homemade chicken pho 🍜 Chicken. Rice noodles. Homemade broth. Herbs and spices. No chicken nugget-shaped mystery meat. No ultra-processed coating. No long ingredient list. Just real, nourishing food. And honestly? This took far less effort than people think. 🍜 CHICKEN PHO RECIPE You’ll need: • 2 onions, cut in half with the skin on • 1 big piece of ginger, cut in half with the skin on • 1 cinnamon stick • 4 star anise • 2 cardamom pods • 1 tsp cloves • 2 tsp coriander seeds • 2 tsp fennel seeds • Around 8 tbsp fish sauce • 1.4 kg chicken I used organic chicken from Waitrose • Rice noodles I used Thai Delight • Your favourite toppings Start by heating a little olive oil in a large pan over high heat. Add your halved onions and ginger, skin still on, and let them cook for a few minutes without constantly moving them. You want them to char and develop loads of flavour. Add the cinnamon, star anise, cardamom, cloves, coriander seeds and fennel seeds, then let the spices toast for a minute or two. Add the chicken and cover with water. Simmer until the chicken is cooked through and the broth is full of flavour. Remove the chicken, shred it and return it to the broth. Add the fish sauce and adjust to taste. Traditionally, yellow rock sugar is also added to pho broth for a little sweetness. I don’t add any sugar to ours, but you can if you prefer. Some recipes use white sugar instead around 6 tbsp but again, I personally skip it. Cook the rice noodles separately, then build your bowl with noodles, chicken and broth. Top with whatever your family loves. We usually add fresh herbs, spring onion, lime and whatever else we have in the fridge. UPF-free, wholefood family dinner. And before the comments start… We don’t eat UPFs, and chicken nuggets simply aren’t allowed in our house. I’m not saying everyone has to make the same choices, but I do believe real family food can be simple, delicious and nourishing. My toddler eats what we eat.
