Mediterranean Baked Fish with Tomatoes & Olives 🐟🍅 Ingredients 4 white fish fillets (cod, haddock, halibut, or tilapia) 1½ cups cherry tomatoes ½ cup Kalamata olives 4 cloves garlic, minced 3 tbsp olive oil 1 tbsp fresh lemon juice 1 tsp Italian seasoning 1 tsp dried oregano ½ tsp paprika ½ tsp red pepper flakes, optional ½ tsp salt ½ tsp black pepper 2 tbsp chopped fresh parsley Fresh rosemary sprigs Lemon slices, for serving Instructions 1. Preheat oven to 400°F (200°C). 2. Season the fish: Pat the fillets dry. Rub both sides with olive oil, then season with salt, pepper, paprika, oregano, and Italian seasoning. 3. Prepare the baking dish: Place the fish in a lightly oiled baking dish or oven-safe skillet. Scatter the cherry tomatoes, Kalamata olives, and minced garlic around the fish. 4. Add the Mediterranean flavor: Drizzle everything with the remaining olive oil and lemon juice. Sprinkle with red pepper flakes and parsley. Place fresh rosemary sprigs over the top. 5. Bake: Bake uncovered for 15–20 minutes, depending on the thickness of the fish, until the fish flakes easily with a fork and reaches 145°F internally. 6. Finish: Spoon some of the warm garlic, olive-oil, and tomato juices over the fish. Garnish with fresh parsley and rosemary. 7.
