🍠 Roasted Sweet Potato & Vegetable Bake with Feta, Pomegranate & Pistachios Ingredients 2 large sweet potatoes, thinly sliced 2 medium Yukon Gold potatoes, thinly sliced 1 medium red onion, thinly sliced 2 tablespoons olive oil 3 cloves garlic, minced 1 teaspoon dried thyme 1 teaspoon dried rosemary ½ teaspoon paprika ½ teaspoon garlic powder ½ teaspoon salt ½ teaspoon black pepper ½ cup crumbled feta cheese ½ cup pomegranate arils ⅓ cup shelled pistachios, roughly chopped 2 tablespoons fresh parsley, chopped Optional Honey-Herb Drizzle 2 tablespoons olive oil 1 tablespoon honey 1 tablespoon lemon juice ½ teaspoon Dijon mustard Pinch of salt and pepper Instructions 1. Preheat the oven to 400°F (200°C). Lightly grease a large baking dish. 2. Prepare the vegetables.
