My favorite Sunday sauce 🫶🏼🍝 * 1 lb pasta (I used @enjoybrami ) * 2 tbsp olive oil * 1 shallot, diced * 3 cloves garlic, minced * 1/3 cup tomato paste * 1 tbsp Calabrian chili paste * 1/4 cup vodka * 1 cup heavy cream * 1/2 cup pasta water * 1/2 cup freshly grated Parmesan * Salt and black pepper, to taste * Fresh parsley and basil, for serving Directions 1. Bring a large pot of salted water to a boil and cook the pasta until al dente. Before draining, reserve about 1 cup of pasta water. 2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the garlic and shallot sauté for about 5 minutes, until fragrant. 3. Add the calabrian chili paste and tomato paste and cook for 4-5 minutes, until it deepens in color and begins to caramelize. 4. Pour in the vodka and stir, scraping up any tomato paste from the bottom of the pan. Let it simmer for 1–2 minutes so the alcohol cooks off. 5. Reduce the heat and pour in the heavy cream. Stir until completely combined and the sauce turns smooth and orange. 6. Add about 1/4 cup of the reserved pasta water and stir until the sauce is creamy and glossy. Season with salt and black pepper. 7. Add the cooked pasta directly to the skillet along with the Parmesan. Toss until every piece is coated, adding more pasta water as needed to loosen the sauce. 8.
