Are you cooking rice like this? Like this? Or like this? You may be doing it wrong! Here's how we cook rice in Vietnam, the way my grandma taught me. Not too dry, not too wet, fluffy, soft and perfectly cooked. First, add as much rice as you want to a pot, then cover it with water and gently wash the rice with your hands. Not like this. Just gently drain the water, then repeat about two more times until the water is much cleaner. So remember, always wash your rice. Cleaner rice, better texture. Now add fresh water. You can measure it, but honestly, I never do. I use this simple rule instead. See this index finger? Put the top tip of this finger on the surface of the rice, then add just enough water to reach the first joint of your finger. And that's it, no measuring cup needed. Now turn the heat up high and bring the rice to a boil. Once you see plenty of bubbles, turn the heat down to medium and give the rice a good stir. This helps stop the rice from sticking and burning at the bottom. Now you can leave it uncovered or cover with a gap so it doesn't boil over and allows the water to evaporate. Once most of the water has disappeared and you see little holes forming in the rice like this, give it one final stir. Then turn the heat down to the lowest setting, cover it completely and let it cook gently for about 10 minutes. After that, give it one last gentle stir so the rice cooks evenly, not dry on top, not wet at the bottom. Then turn off the heat and let the rice rest, still covered, for about another 5 minutes. And now, look at this! Fluffy, soft and perfectly cooked rice. So just remember this one simple rule: 3, 10, 5. Wash your rice 3 times, cook on low heat 10 minutes once the water has evaporated, and let it rest for 5 minutes before serving. Then you will have a perfect rice like this. And if you've got leftover rice, don't throw it away, store it in the fridge and turn it into this delicious egg fried rice. Follow along and I'll show you how I make it next, the Vietnamese way!
