welcome to all my recipes for my lunch meal preps, cosy dinners, asian-ish comfort meals + more good food!
Guess what I'm packing for lunch this week because I refuse to buy lunch at work anymore. Hey, I'm Amanda and welcome back to week five of my packed lunch meal prep series. Today we are making this sticky soy roasted squash and crispy chickpeas quinoa salad. This is the perfect autumn transition salad now that it's getting a bit colder outside. The roasted squash gets nice and caramelized and sticky with the umami flavor from the soy sauce. I also air fried some chickpeas until crispy for a nice crunch to the salad. I love using quinoa in my lunches because it provides fiber and protein as well as being the perfect base for soaking up salad dressings. This salad is cozy, comforting and full of fiber. It's still vibrant and fresh from the pomegranate seeds and the soy sauce apple cider vinaigrette. So if you are tired of spending money on boring meal deals that don't fill you up, then follow along because every week I'm going to be showing you healthy meal prep lunch ideas. I also launched my Substack earlier for all the full recipes so you can find them all in one place. The link's in my bio and you can subscribe for free.
