I’m not exaggerating when I say I’ve made these roasted chicken thighs probably 8 times since finding this recipe. 🤣 They are THAT GOOD!! The chicken is so tender, and the gravy is absolutely delicious over mashed potatoes! This has quickly become one of our favorite dinners! All credit to @Allyssainthekitchen for this amazing recipe that changed my life 😅🤍 ROASTED CHICKEN THIGHS 🍗 Ingredients: * Boneless chicken thighs * Salt & pepper * Garlic powder * Paprika * Italian seasoning * Olive oil * 1 onion, sliced * 2 cups chicken broth * Fresh thyme * Cornstarch + cold water (for gravy) Directions: 1. Fill a baking dish with boneless chicken thighs. Season generously with salt, pepper, garlic powder, paprika, and Italian seasoning. 2. Drizzle with olive oil and toss everything together until the chicken is evenly coated. 3. Add sliced onion, pour 2 cups of chicken broth over the top, and add fresh thyme. 4. Cover tightly with foil and bake at 350°F for 1 hour. 5. Remove from the oven, discard the thyme, and carefully pour the cooking liquid into a separate bowl or saucepan. 6. Mix cornstarch with cold water to make a slurry, then stir it into the cooking liquid to make the gravy. 7. Pour the gravy back over the chicken and return to the oven, uncovered, at 450°F for another 30 minutes, or until beautifully roasted and the gravy has thickened! We serve ours over homemade mashed potatoes with roasted carrots and honey butter rolls. SO GOOD! Save this one for your next family dinner! 🤎 #ChickenThighRecipe #EasyDinnerIdeas #FamilyDinner #DinnerRecipes #HomeCooking
