STOCKING OUR PANTRY | PART 6: TERIYAKI CHICKEN 🫙 One of my favorite things about stocking our pantry is having homemade, ready-to-use meals on the shelf! Teriyaki chicken is perfect for those busy nights when you need something quick and easy without starting dinner from scratch. Serve it over rice, with steamed vegetables, or use it for an easy stir-fry! Ingredients: Makes approximately 7 quarts -15 lbs boneless chicken, cubed into 1-inch pieces -3 cups brown sugar -3 cups soy sauce or coconut aminos -1½ cups apple cider vinegar -3 tsp freshly grated ginger (or 1 tsp ground ginger) -4 tsp minced garlic -1 tsp black pepper Cut chicken into approximately 1-inch cubes and distribute evenly between seven quart jars, leaving a generous 1 inch of headspace. In a large saucepan, combine the brown sugar, soy sauce, apple cider vinegar, ginger, garlic, and black pepper. Bring to a boil over medium-high heat, stirring frequently until the sugar dissolves. Remove from heat and evenly distribute the sauce between the jars. Leave at 1” headspace for a good seal. Remove air bubbles, wipe jar rims thoroughly with vinegar, and apply lids and rings to fingertip tight. Pressure can at 10lbs of pressure adjusting to your own altitude. Quarts take 90 minutes in the pressure canner, but if you’re doing pints pressure can for 75 minutes. Another homemade pantry meal idea for busy weeknights!
