6 months ago, our company was almost forced to recall $2,000,000 worth of our chocolate bars. All because of a single error in the testing method. What method does the CFIA use? ELISA. In July, the government tested and found traces of undeclared pecan and pistachio in our cookie dough squares. And concerned about the risk to people with these allergies, hit us with a class 2 recall. But after doing a full investigation, we couldn't find a single place where pecan and pistachio could have come in contact with the bars. And that is where things got crazy. Did you know that every food is made up of a unique protein structure that tells our body how to digest it? But tree nuts, like pecans and pistachios, have protein structures that are so incredibly similar to each other that sometimes the test kits can confuse one for another. So here's what that means. All that it would take for us to get a false positive on the pecan and pistachio is having another tree nut in our bars, one that is declared on the back of the package. If I can find an alternative test that doesn't use proteins, I can prove that theory. I can prove our bars were never contaminated and that we won't need to recall. So I spent hours calling experts throughout the industry until I found the PCR test, a method that analyzes the DNA of your product instead of its protein content. It could identify cashew DNA from pecan and pistachio DNA. But getting a lab to actually do this test was a lot harder than I expected. But after over a dozen no's, all we could do was wait and hope that the CFIA didn't enforce the recall before the results came in. And just after a few days, the lab results came back. Pistachio is negative. Pecan is negative. The government's job is very important. They protect food safety and hold companies accountable for their actions. I just want you to realize that in life, everyone and anyone can and will make mistakes. That is why it's so important to question everything.
