This is how I process 5 pounds of potatoes for my family and it doesn't go to waste. Step one, compliment my skirt. It's new. Step two, separate your potatoes. We're making two meal preps with this bag. Hashed and smashed. And no, I won't make you wait for a part two. This is going to be a long video. I'm going to start with the hashed first. Why? That's right, because it takes longer. It's called a chop box. Voila! Transfer them to a reasonably sized bowl. Fill it with water and set it aside. And while the hashed soak, we smash the rest. To get to this point, you need to cook your potatoes until fork tender. Don't tell anyone I told you this, but I just use the microwave. However, you can boil them if you choose. However you cook them, just be sure to use light to medium pressure when smashing. You don't want them flat as a pancake. You want them to stay kind of thick. Like me. Next, we take our potatoes and place them onto piles of cheese, preferably parmesan or cheddar. Brush them with a neutral oil. My preference is canola. And marvel at how they turned out after they've been baked in a 425 degree oven for 20 minutes. And while these were cooking, we take that same bowl of potatoes from earlier, dry them with a lint-free towel, toss in canola oil, and then we bake them in a 400 degree oven for 30 minutes. Now I know what you're thinking. Allison, unseasoned and un-crispy, that's not hashed at all. No, this is meal prep. It'll get crispy when I air fry it at meal time and season to your liking.
