This is how I process 10 pounds of potatoes for my family of two to make sure that we actually eat it and it doesn't go to waste. Step one, inspection. We're making sure they're not rotten. Step two, compliment my outfit. It's cute. Then wash your potatoes. Step three, get a wave cutter. And what do wave cutters make? That's right, waffle fries. Now here's how you do it. You take your potato and make your first slice. Do you see the little ridges that it made? Okay, good. You don't want these to match with these. So we rotate the potato and slice. Rotate potato, potato. Rotate potato, potato. Rotate potato, potato. Repeat that process until you run out of potato. Now remember, the thickness of your waffle fry is completely dependent on the thickness of the gap in your wave cutter. So if you want them extra thick, like me, you need to use the size XXL. Step four, get a big ass bowl, fill it with your potatoes and let them soak for a minimum of 30 minutes. I'm going to soak these until my dishes are done. Step five, partially bake your potatoes. But before you get to this step, you first need to pat them dry with a lint-free towel, toss them in canola oil and load them onto parchment lined baking trays. My potatoes are thick and my trays are stacked. So my oven is at 450 degrees and my timer is set for 30 minutes. Voilà. Step six, wait for your potatoes to cool down and put them away. Remember, this is meal prep. Only store in the fridge what you plan to eat that week, the rest go in the freezer.
