I was looking through my pantry and I noticed I had this bag of orecchiette pasta and I don't remember why I had it. No idea what I was gonna do with it. So I decided we're gonna use it today. Something else I always have in my pantry is sun dried tomatoes. If you've been following me a while then you know the absolute lust I carry for sun dried tomatoes. I've got two chicken breasts here just cut into bite size pieces. Just a little bit of this sun dried tomato oil on them. I'm gonna hit mine with some salt, some pepper and I'm gonna do a little smoked paprika cause it sounds good. But you do what you want on yours. Get our pan heated up and we'll toss these up when our pan's good and hot. Our chicken's going in. We're gonna fry this down just for a couple of minutes. We don't have to cook it all the way through right now. We just want to get a little color on it. So I've got it in an even layer and I'm just gonna leave it and let it brown on one side. We'll give them a little stir and let them brown on that other side. Alright our chicken's looking good. Drizzle in just a little bit more of this sun dried tomato oil to throw in some of these tomatoes. You can cut up fresh garlic if you want. You know I'm not doing that. So we're gonna do a big ass scoop of garlic. Maybe two. We'll cook all this down together for just another minute or two. I'm gonna add in the pasta. I'm gonna stir this around and let that pasta start to soak up some of that flavor in the pan. And I'm a firm believer that lemons and sun dried tomatoes go together like peanut butter and jelly. So we're gonna deglaze this pan with some lemon juice. If you had a bottle of white wine open, that would work great here too. We're gonna add in some chicken stock. I'm gonna do just enough to cover the pasta. That was a little over half this carton. This is four cups here. When this starts bubbling, we're gonna cut the heat down to low, keep it on a simmer, cover that bad boy up. Let it cook for about 10 minutes till that pasta's done. Okay, our pasta is about 80-ish percent done. And the best way to tell when your pasta is at that stage, I'm gonna show you a little trick. Just eat one. Alright. I'm gonna put in a cup of frozen sweet peas. No special reason other than this is what I had in the freezer and I wanted to add some vegetables. I had a block of Boursin in the fridge, so that's gonna go in too. But you could do some Parmesan, whatever you got on hand. I'm gonna nestle that right there in the middle, kind of break it up a little bit. And we'll cover it up, let everything finish heating through and let that pasta finish cooking. It's been just a couple of minutes. So we can cut the heat. Everything's done. We're just gonna stir it together. I'm gonna throw a little parsley in mine, just cause, you know, sometimes I like to feel cute. We just made dinner in one pan and this took me less than 20 minutes.
