Here are 5 realistic dinners I've made recently as a busy mom of 4 working 2 jobs. First up are these crispy baked chicken tacos. These ones were so easy. I used rotisserie chicken to make them as easy as possible. I mix them into like a cream cheese, salsa, taco seasoning and 1/2 cup of shredded cheese. Fold in the rotisserie chicken and set aside. Cover a sheetpan with parchment paper and lay out your tortillas. Top each tortilla with optional, 2 tablespoons of the chicken mixture and 1 tablespoon shredded cheese. Doesn't need to be exact, just do what works. Once you have loaded all the tortillas and folded them in half, brush a little bit of oil on the tops of the tacos. Place another sheet pan over the tacos and press down. Bake in the oven for 10 minutes, flip the tacos and bake uncovered until crispy (5-10 more minutes). Some of the cream cheese might come out of the pan and that's ok! Just use a spatula to remove the tacos from the pan. I served the tacos drizzled with more salsa and cotija cheese. Enjoy! Next up was the dinner that took the longest, but trust me, it was still really simple to make. Worth the extra time that it took to make because this stuffed chicken was absolutely delicious. Perfect to make for a nice Sunday dinner or even on a weeknight if you just have a little bit extra time. I made another super nostalgic dinner. I made this beef stroganoff. I had ground beef so I used that instead of like strip steak. Whipped up the sauce and of course used egg noodles to serve it with. The center brought me right back to the 90s. I can't wait to make it again this week. Last but not least, and probably the easiest dinner of the week was this Trader Joe's dinner. These buffalo chicken Caesar sandwiches were so yummy. I didn't write a recipe up for these ones. You really just cook everything separately and assemble it all together. That's it for now. Let me know if you try any.
