Here's everything we ate for dinner this week. First on the menu is a one pan beef stroganoff, so I started off by dicing a yellow onion and I don't know what was in these onions, but they were burning my eyes bad. So I used my veggie topper to dice them up and then I added them to some butter and let them get soft in my pan. Then I added in one pound of ground beef that I did not leave out long enough to thaw, so it was a little bit hard, but I added some seasonings, three cups of beef broth and one cup of heavy cream. Then to that, I added two-thirds cup sour cream and two tablespoons of Worcestershire sauce. Then four cups of egg noodles and I let that boil together until the noodles were soft. I get a lot of questions about my crock pot. It's a Drew Barrymore 10-in-1 multicooker, so it sears, sautés, slow cooks. I can do everything in this pot and it was perfect to make this beef stroganoff super easily. And this was a perfect meal to celebrate that little taste of fall weather we got this week. Next up is white chicken enchiladas and these are one of our favorites. I actually posted the full recipe for these on my page in a more detailed version if you want to go check it out, but I made a roux by adding two tablespoons of butter and one tablespoon of flour, then to the roux I added two cups of chicken broth, one cup of sour cream and one can of diced green chilies. I added some shredded chicken and one cup of shredded cheese and a little bit of taco seasoning and rolled them up in a tortilla. I've also used just plain rotisserie chicken for this to save a little bit on time. And I put them in a greased baking dish, poured our sauce that we made over the top and put them in a 375 degree oven for about 25 minutes. Then I took them out, added some more shredded cheese on top and put them back in for about five more minutes to get nice and melted. And these are delicious. I mentioned in my last video that we've been working our way through all of the Marvel movies, so we ate these and watched Captain America: Civil War, which I think is my new favorite one. So I'm curious to know what everyone's favorite Marvel movie is. Next up is a creamy lemon parmesan chicken with mashed potatoes. So I seasoned some thinly sliced chicken breasts with salt, pepper, and lemon pepper seasoning and then just cooked it in a pan until it was cooked all the way through. Then I let my chicken rest while I got started on the sauce. So I started with equal parts two tablespoons of butter and flour with a little bit of minced garlic and mixed that together. Then you're going to slowly add in two cups of chicken broth and one cup of heavy cream. You're going to want to do this slowly. Then I added in a little bit of shredded parmesan cheese. I always measure this with my heart and whisked it all together and added in the juice of half a lemon. Then I put the cooked chicken back in the sauce and let it simmer together and thicken up for about another 10 minutes. Then I served this over mashed potatoes, drizzled some of that extra sauce on top and put some lemon on top and parsley to make it look fancy. Lastly, is a hibachi chicken and fried rice. So I started by dicing up a yellow onion and sautéing that in some butter and then I added in some old white rice and I added some soy sauce and teriyaki sauce to my rice. I scrambled in a few eggs and mixed that in there. You could also add some veggies if that's your prerogative, but I like veggies. For my chicken, I kept it super simple and diced up some chicken breasts and cooked it in some teriyaki sauce and then I threw it all in a bowl together. And that was everything we had for dinner this week.
