This may not be traditional but it’s how my family has always made it. Here is the recipe! Chicken Saltimbocca Ingredients 1-1.5 lbs chicken, thinly sliced 1/4 lb prosciutto 1 cup flour 1/2 tsp salt 1/4 tsp pepper 4 tbs olive oil 2 tbs butter 2 cups sliced mushrooms 1 cup marsala 1 cup chicken broth 4 slices mozzarella cheese Chopped parsley, for garnish Instructions Heat the olive oil in a large skillet over medium heat. Top each piece of chicken with a slice of prosciutto, pressing gently so it sticks. In a shallow bowl, combine the flour, salt, and pepper. Dredge each piece of chicken in the flour mixture, coating well while keeping the prosciutto attached. Place the chicken prosciutto side down in the skillet and cook for about 3 minutes per side, or until golden brown with crispy edges. Transfer the chicken to a plate. Add the butter and mushrooms to the skillet and cook for 2 minutes. Sprinkle in 2 tbs of the remaining flour from the dredging mixture and stir until the mushrooms are evenly coated. Pour in the marsala, scraping up any browned bits from the bottom of the pan. Stir in the chicken broth, reduce the heat to low, and simmer for 5 minutes. Return the chicken to the skillet, top each piece with mozzarella cheese, cover, and cook on low until the cheese is melted. Garnish with chopped parsley and additional black pepper if desired.
