I want to make a super complicated dinner on a rainy Tuesday night. Said nobody ever. Glad we're all on the same page. Let me show you what I'm making. 1 pound of ground beef that's obviously defrosted. I'm just being honest. It is what it is. That looks great. Next I'm gonna add in a little bit of homemade taco seasoning, obviously. All right. And now you're gonna need to open up a few cans. Some diced tomatoes and a 4 oz can of green chilies. Add those in with the meat. Add in the 15 oz can of tomato sauce as well as two cups of water. Give all that a good mix. And then one and a half cups of rice. Now if you don't like beans, you don't have to add them, but we love beans. So I'm gonna add in a can. But again, this is optional. A few extra seasonings here. I'm gonna add in some pepper, a dash of salt. And some garlic because I'm always adding garlic to everything. All right. Go ahead and cover this and cook over medium heat for about 15 to 20 minutes or until the rice is tender. And then I'll show you the next step. Shredding an 8 oz block of sharp cheddar cheese. And pretty much every plate in my house is dirty right now, which is why I'm using a paper towel. Like I said, it is what it is. All right. My rice is about a minute away from being done. Adding in the cheese. Give that a good mix while the cheese melts. And if there's any leftover cheese, find somebody in the house that enjoys cheese. For fun, I'm gonna crumble up a couple of taco shells. You could also use tortilla chips. All right. Last step, we're gonna mix some taco sauce and sour cream to make a little topping for this. Measure with your heart, per usual. Does it look appetizing? Absolutely not. But listen, it still is so delicious and it's so easy to make.
