I worked at Chick-fil-A for over a decade and today I'm showing you how I make their waffle fries right at home. They're so crispy on the outside but still fluffy on the inside. Perfection. Start by giving russet potatoes a really deep, thorough scrub. I'm talking about a scrub at the spa. You will need a large waffle fry cutter for this, not a standard waffle cutter. I also recommend using a cut-resistant glove. Slice the potatoes one direction, rotate it 90 degrees, slice, rotate, and repeat. Soak the potatoes in boiling water for 20 minutes. This starts to soften the potatoes for that pillowy inside but also removes some of the excess starch. Then fry at 325 degrees for 5 minutes to par cook the fries. Fry again at 350 degrees for 5 minutes until golden brown. Drain the fries on a paper towel or a wire rack and salt immediately. Now you can have waffle fries any day of the week, even on Sundays.
