I didn’t think I could top my sheet pan kebabs… until I made them with fish. Since it’s fish, I finally got to pile on a creamy homemade tzatziki, roasted peppers and onions, wrap it all in a warm pita, and it turned into one of the best sandwiches I’ve had in a long time. Perfect for the Nine Days, easy to make, and guaranteed to become a family favorite. No special sheet pan? No problem! A regular sheet pan works too, just roast the vegetables alongside it. Fish Kebabs🐠 • 2 lbs firm white fish (I used cod) • ½ bunch parsley • ½ bunch cilantro • 1 red pepper • 1 red onion • 2 garlic cloves • ¼ cup olive oil • 1 tbsp paprika • 2 tsp salt • 1 tsp black pepper Roasted Vegetables🧅🌶️ • 1 onion, sliced • 1 red pepper, sliced • 4–5 Serrano peppers (or vegetables of your choice) Tzatziki🥒🌿🧄 • 3 Persian cucumbers, shredded • ¼ bunch mint, chopped • ¼ bunch dill, chopped • 2 garlic cloves, grated • 1 cup Greek yogurt • 2 tbsp olive oil • Juice of 1 lemon • 1–2 tsp salt, or to taste Jumbo pitas, for serving Instructions 1. Pulse the fish in a food processor until finely minced. Transfer to a bowl. 2. Blend the parsley, cilantro, pepper, onion, and garlic until finely chopped. Strain well, squeezing out as much liquid as possible. 3. Mix the vegetables with the fish, olive oil, and spices. 4. Spread onto a greased sheet pan, about ½-inch thick. Score into rectangles. Place the wire rack on top, add the vegetables, drizzle with oil, and season lightly with flaky salt. 5. Bake at 400°F for 30 minutes, then broil for 3–5 minutes if desired. 6. Meanwhile, mix together all the tzatziki ingredients. 7. Warm the pita, fill with the fish kebabs, chopped roasted vegetables, and tzatziki.
