What I fed my family today 💛 Easy, healthy family meals! Breakfast: Brownie Batter Oatmeal In a cold saucepan, whisk 1 egg with 2 tbsp cocoa powder, 2 tbsp maple syrup, 1 tsp vanilla, and ¼ tsp salt. Add 2 cups milk and 1 cup oats. Cook over medium-low heat for 8 to 10 minutes, stirring frequently, until creamy. Add another splash of milk if needed. First Snack: They each had a glass of plain @Lifeway Kefir . Lunch: One-Pan Chicken Fried Rice Marinate 1 lb diced chicken with 2 tbsp soy sauce, 2 sliced green onions, 2 minced garlic cloves, and ¼ tsp black pepper for 10 to 15 minutes. Cook in 1 tbsp avocado oil, then remove from the pan. In the same pan, heat 2 cups frozen vegetables, push them aside, and scramble 5 eggs. Add 2 cups cold day-old rice, the cooked chicken, and 1 more tbsp soy sauce. Stir until hot. Second Snack: I made snack plates with almonds, dried apricots, @MadeGoodFoods granola bites, and whole-wheat crackers. Alice had cheese cubes, Amir had a @Chomps beef stick, and they each had Milo’s Fruit Punch. Dinner: Air-Fried Salmon Bites and Carrot Salad Toss 1½ lbs salmon bites with 2 tbsp avocado mayo, 1 tsp garlic powder, 1 tsp paprika, ½ tsp salt, and ¼ tsp black pepper. Air-fry at 400°F for 7 to 9 minutes.
